Banana Taco

When we went Gluten Free after two Celiac Disease diagnoses in our family, I had a mini-freak out about packing lunches for the kids. I came home one day to find Jon experimenting in the kitchen, and this was his result. It’s now my kids’ all time favorite thing to have in packed lunches, but it’s versatile enough to be a breakfast or a snack!

Banana Taco

Prep Time: 5 minute
Yield: 1 taco

Ingredients:
  • 1 tortilla (for Gluten Free, I suggest Siete brand. Look in the frozen section of Metro Market or Costco, and likely others as well)
  • 1 banana
  • Nutella (~1T)
  • Peanut Butter (~1T) – look for peanut butters without Palm Oil for WFPB options that don’t destroy gorilla habitats!
Instructions:
Spread a single strip of each of the Peanut Butter and Nutella down the length of the tortilla diameter, in thickness to your preference. Unpeal banana and lay it on top of and parallel to the Peanut Butter and Nutella. Slice the banana as necessary to maintain a mostly straight line from the banana. Roll taco. Serve.
